To open an alternate route you will need to scan the grass near the place where Dodorio scares Pichu and Scorbunny. It will give you access to Snorlax Den.
Side Path (Day) Request in Pokémon Snap
The first request for Side Path (Day) in Pokémon Snap is Dancing Trio. To unlock it you will need to add Shroomish to your Photodex. The task is to go to the path and find three Shroomish Pokémon near one of Crystalblooms. Two of them will be asleep and to wake them up you will need to throw an Illumina Orb. After you awaken them play the Melody and Shroomish will dance for you. Take a photo of them and bring it to the Professor.
The second request is Snorlax Dash. After adding Snorlax to your Photodex go to the alternate route and find a Snorlax in its lair. It will be sleeping and to wake it up you need to put a Fluffruit in its mouth. Play the Melody and leave the lair. After this, you will meet Snorlax at the end of the course. Throw another Fluffruit and Illumina Orb to make the Snorlax dash and take a photo of it.
