Unlike what it may seem like after completing a few runs, the odds of getting shiny Pokemon in Dynamax Adventures aren’t completely randomized. They are quite low, however, so that is why you may have to complete Dynamax Adventures quite a few times to get shiny Pokemon.

The odds of getting a shiny Pokemon in Dynamax Adventures is 1 in 300 without the Shiny Charm, which is an extremely low value. Things do improve quite a bit with the Shiny Charm, as the odds increase to 1 in 100.

Unfortunately, there is no way of knowing if you are getting a shiny Pokemon in Dynamax Adventures before the end of a run.
